In Large pot add beans, fill pot with water and add some salt. Cover
and cook on med/high heat for 2 hours. Strain beans and set aside, in
large pot brown hamburger. Stir all the remaining ingredients into the
pot with the cooked hamburger, bring to a boil and cook for ½ hour. Last
add the 5 cups chicken stock, stir and let cook on med heat for 1 hour.</span><br />

canned beans or any other ingredient you would like to use just

Large saucepan add butter, garlic, and onion let cook on med high heat
until onion turns translucent. Add the Clams, Mussels, and Shrimp cover
and let sit for 6-7 min. As that sits start your fettuccine noodles
boiling in some salt water. After the 6-7 min open the pot, the clams
and mussels should have opened up. Pour in the heavy cream and salt,
give it a few stirs and let it heat until it just starts to boil. Add
the parmesan cheese and scallops, stir until the cheese has all melted
and you have a creamy looking sauce. Continue stirring every min for
about 5-6 min then turn to low and let sit uncovered. Strain the noodles
when finished, place a few noodles on a plate. Top with a nice amount

told myself I would not eat fast food for a year and I am sticking to
that. On occasion I have a little deli food, I want to cut that out to.
This does not mean I am eating very healthy it just means I have to fix
everything myself, cutting out most preservatives, extra sugars, and
chemicals. Since the beginning of the year just cutting fast food out I
have lost 45 pounds. But I do have the cravings sometimes for KFC. The
following recipe is of a slightly spicy chicken strips recipe I came up

not to overcrowd the fryer. Fry for 5-6 min until nice and golden brown,

am making polenta, II never heard of polenta before a couple of years
ago. It is a very simple dish to make and can be prepared hundreds of

large pot add chicken stock and salt and bring to a boil. As soon as
water begins to boil slowly add cornmeal making sure to stir constantly,
once all the cornmeal is in continue to stir. It should begin to get
thick within seconds, continue to stir until you can move your spoon
across the bottom and it takes a few sec to fill back in. At this point
add butter stir until melted and mixed in completely. Quickly transfer
the polenta mix to a buttered dish of sort, it will take the shape of
this dish I use a glass pie pan. Let cool for several hours if you would
like to cut.</span><br />

I been wanting to learn a little more about the food I eat then just

picked up its popularity quickly due to it being harvested in early

a large pot add corned beef and seasoning packet that comes with it.
Fill with water to top of pot, bring to a boil and cover for 2 hours.
Peel carrots and slice into 1 ½ inch pieces, slice a little bit off two
ends of each potato, Slice the onion into large chunks. After the 2
hours add the onion, carrots and potatoes to pot. Turn to med heat and
cover back up for 1 hour. Cut cabbage into 4 pieces, add to pot for 15
min. Remove corn beef, slice and serve with a little of each vegetables
on a plate.</span><br />

am going to keep the recipes simple for the next couple of days. Today I
am doing pigs in a blanket, a recipe that most of you know or think you
know. If you are anything like my friends you each have your own way to
make them. I have heard of hot dogs wrapped in croissants, sausage in
pancakes, even little smokey's wrapped in biscuits. I am not going to
say any of those ideas are wrong …. Wait, yes I am! The true way is to
make them with sausage and biscuits. </span><br />

frying pan cook the sausage until it has a nice golden brown coat. Open
the biscuits and cut each biscuit in half. Flatten one of the halves
with your hands and wrap around a cooked sausage link and place on
baking sheet. Repeat until all biscuits and sausage are done and bake for
10 - 15 min at 350, once biscuit's are light brown remove and place on
plate to cool. Goes great with honey mustard dipping sauce.</span><br />

I was a kid, I would always want to go to Hong Kong restaurant. A
little chinese food place in Lakeport CA near where I had grew up. I
don’t remember much of what I ate, except 2 dish’s stand out in my
memory one was pot stickers, the other won ton soup. As a kid I don’t
think I even cared that much of the soup, I was more excited to use one
of those big Chinese soup spoons.. Now that its years later I have
learned to also enjoy the soup it’s self. It is a simple recipe, and

Chicken stock to large pot, Slice bok choy into med strips across the
leaves and stems. Chop all the carrots into small squares, place ⅔ of
the carrot and the bok choy in pot with the stock. Cover and turn to med
high heat. Remove any skin and tail from shrimp and chop into small
pieces. Chop napa cabbage into small pieces. In large bowl mix the
shrimp, remaining carrots, cabbage and soy sauce. Place about 1 spoonful
of the shrimp mixture on each won ton wrapper and fold.</span><br />

Do not over crowd pot with to many boil for about 7 min and serve.</span><br />

my way home from San Francisco, CA, I thought it would be nice to stop
and get something to eat. Just across the Golden Gate Bridge from San
Fransisco is the water front community of Sausalito, a town world renown
for its food; so you understand picking a place to eat was difficult.
With over twenty restaurants in walking distance of downtown, I asked a
few of the locals what they recommend. My choice was made. I went to
Sausalito Bakery and Cafe, a small restaurant right on the seaside
strand in the heart of town.</span><br />

As you walk through the doors, you are instantly greeted and taken away
by its peaceful and private atmosphere. The lighting was dimmed down,
letting the natural light from the sun shine through the front windows.
And the tables placed in there own hollows in the back walls gave for a

Fariba Azar, the owner of the cafe, who has been running the restaurant
for over 10 years. She had a few recommendations. It was hard to choose,
everything looked great. I went with the meat lasagna with a slice of
their uniquely made bread pudding. I loved the serving style. Almost
everything is prepared and displayed in their cases, so you can have
more of a visual as you choose. You place your order and sit down as

plate for a nice artistic touch, with 2 slices of that famous San
Francisco sourdough bread. Everything is made right there in the bakery
from scratch using only local fresh ingredients. The lasagna was great
with several layers of delicious homemade noodles and sausage, topped
with extra feta and mozzarella cheese. The addition of a few Kalamata
olives gave the perfect touch to this dish. The bread pudding is the
other dish they served. Standing about 5 ½ inches tall was their moist
homemade bread pudding topped with hot blueberries and a scoop of fresh
whipped and chilled cream. Delivering the perfect combination to end a
great meal.</span><br />

oil up in pan on med high heat, add rice to hot oil and stir until rice
turns bright white. Strain out oil add rice back to pan with chicken
stock, water, onion, garlic, tomato paste and jalapeno. Stir once and
cover, reduce heat to med low for about 30-40 min until all liquid is

much to explain here, we all know of tacos. I created this dish as a
way to use up some extra salsa I had. It turned out so moist and
flavorful that every time I make my salsa I put some aside for this
tacos. The recipe is not very complex and is more about what you have
sitting around so don’t worry if you need to modify it a little.</span><br />

skillet heat up oil on med high heat. Toss in chicken, chili flakes,
cumin, oregano and ¾ cup Salsa. Fry for about 5 min, stirring until most
of the moisture from the salsa is gone. Add the remaining ¾ cup of
salsa, mix for a min or two to make sure it is hot then place on warm
tortillas add your choice of toppings. Makes about 8 tacos.</span><br />

you can see this is not the most beautiful dish to look at, but it is
truly one of my favorite holiday side dish’s. Right up there with green
bean casserole and mashed potatoes. My father would always make this
and I was to busy shoveling it into my mouth to think how it was made.
Last year he was unable to make it do to his arthritis and gave me the

bacon into ½ inch pieces and throw in frying pan, meanwhile cut corn
off the cob and milk the cob and put aside. In another bowl mince
garlic, chop celery, onions and carrots fine. Once bacon is crisp add
corn and fry for about 5 min. Then add garlic, onions, carrots and
celery cover to top of vegetables with water, add salt and pepper to
taste. Bring to a boil on med high heat. Once at a boil stir and turn to
med heat cover and let slowly boil for 2 hours. </span><br />

mixing bowl combine potato, onion, flour, cheese, salt, pepper,
turmeric, and one egg. Mix everything together. In hot pan add butter
and oil and heat on med high. Spoon batter into pan like a pancake and
press down tell about ½ inch thick. Fry for about 3-4 min tell golden
brown, flip and repeat. This is a great breakfast item and makes about
4-6 patties</span><br />

first would like to thank every one that showed up to the meatloaf
throwdown this was our 10th throwdown, I think every thing is starting
to run very smoothly. So again thank you to all the judges, cooks and

If you were not at the throwdown we did meatloaf for the first time. We
had three entrees that included my roommate Chris Johnstone a baker for
corporate grocery store Safeway. Also entering was long time friend
and past high school enemy Sebrina Dollosso, phlebotomist by day and self
taught chef by night. And we had my self Nicholas J Cole. </span><br />

battle was on, in 3rd place we had Chris, he was going for a more
traditional meatloaf with a slight twist of bell peppers, mushrooms and
onions blended and mixed into meat mixture with cheddar cheese pockets
all throughout the loaf. He topped it off with a spice honey mixture
that was placed on half way threw the cooking process, and served the
meal on paper plates the way a home cooked meatloaf was meant to be
served.</span><br />

of Chris was Sebrina with her barbecue themed meatloaf consisting of
finely chopped mushrooms, bell peppers, and bacon that she had spiraled
threw out for a pleasing appearance when cut. She served hers to the
judges on a nice white and blue designed rectangular plates,. the meat
was placed on a bed of barbecue sauce for a little extra kick.</span><br />

the throwdown by only 2 points was my Mexican style Boiled Meatloaf
from yesterdays post. I tried to grab some of the originality points by
creating a Mexican style meatloaf consisting of a mixture of beef, pork,
rice, onions, and fresh mint chopped up and mixed together. It was
boiled in a soup mixture of tomatoes, carrots and chilies to cook the
rice and infuse the flavors. I then served it fanned out on a plate with
a few of the complementing vegetables and juice from the soup, topped
with a mint leaf for the garnish.</span><br />

for all the dishes were put together wonderfully, Dylan being a full
time judge for all the throwdowns was looking for more of the bold
flavors, Chris's did not deliver as it was a little to blended for any
one flavor to stand out, he did find what he was looking for in
Sebrina's with her sweet barbecue touch. Jeff was looking for a little
something different, Sabrina's did not have quite enough spice to offset
the sweetness for Jeff's taste he found more comfort in the the mint and
meat mixture in my meatloaf with the spicy juice and sweet vegetables
of my dish. Ladona seemed to enjoy them all, she did note the nice
touch of cheese in Chris's.</span><br />

After pushing threw second place the last 4 throwdowns I have emerged
the champion once again. My Mexican style boiled meatloaf came out on
top but it was not easy I had some major competition, from friends
Sabrina and Chris. I will go over the whole throwdown in tomorrows post,

Bowl add all ingredient for the meatloaf except the ketchup and mix
together. Place in large muffin pans and bake at 350 for about 45 min.
Once you take them out remove from muffin pans and add each one into the
vegetables and stock turn to med heat and boil for ½ hour. Remove meat
loafs from liquid and place on oven sheet, cover with the ketchup and
place back in the oven for 20 min. Slice and serve with a spoon full of

Following up on my pineapple vinegar from last week, I placed it in a
closet so that it was out of the way and I did not think or mess with
it. The pineapple that flouted to the top had started growing a little
mold on it, I was worried about this but asked around. There is no
problem with a little mold once the liquid hits the stage of vinegar it
will have plenty of acidity to kill almost anything. The liquid was also
a little foggy and again this is normal for this stage. </span><br />

I removed the cloth I had placed over it in the closet and strained out
the pineapple chunks and placed the liquid back in a clean jar. I
covered it once again with a cloth, I am going to place it back in the

the green onion and cilantro aside. Cut the tomatoes in half and dice
the garlic. In a large skillet on med high, heat a brush with olive oil
and sear the tomato halves until they are nice and dark on the bottoms,
then flip them over and do the outside. If you have a blow torch, that
will work great for searing the outside of the tomatoes. Remove them and
set them aside. Add a little more oil and place the chilies in and sear
them until all of the sides are brown and the chilies are soft to
touch; right before you pull the chilies out, throw the green onion in
and fry it just until it's soft and begins to sweat. In a food
processor, add the tomatoes, green onions, cilantro chilies, and garlic
and blend until everything is about uniform in size. Once it's all
blended, add the white pepper, salt, water, and lime juice, adjust the
salt to taste. Place in the fridge over night to let the flavors mix
well, giving you an overall better taste.</span><br />

Day 5 hell yes this is the longest I have ever stuck to a project.
Thanks to my roommate helping sponsor my blog, and what I mean by sponsor is, buying food for me too cook. He bought a nice Tri-tip the
other day and wanted me to cook it for him. The first thing that came to
mind was my recipe for my own Montreal seasoning, this recipe saved
Christmas last year. We where having prime rib for the Christmas dinner
and I love adding the Montreal Rub to just about any beef roast, it has
the perfect combination of saltiness and spice. The only problem was I
forgot to buy it and all the stores had already closed. I was not sure
what to do, someone mentioned you can try and make it yourself. I do
have a impressive spice cupboard so I looked it up, I had to make a few
slight changes to make it work with what I had but the end result was one

As I was doing some research on how to grow a avocado tree that I
showed you in yesterdays blog, I ran into a picture on wikipedia of a
Indonesian Avocado Shake. Safe to say that blew my mind, I never heard
of a avocado shake. I had to read up on it and its a popular drink made
many different ways from coffee to chocolate. Before I knew it I was in
the store buying avocados, there was not going to be any sleeping for me
tell I have tried this drink. I got all the ingredients and got

everything in blender and mix until smooth about 1 min. Run some choc
syrup around the inside of the glass and let it run down side. Fill the
Glass with Avocado Mix and top with a little more syrup. Makes 2 8oz

there we have it, all I had left was the tasting, The texture was
wonderful smooth and creamy the choc and La lache did not take away from
the avocado flavor they worked together in a way that I did not expect.
Personally I would have to say it was a nice experience but to me I
would keep my avocados out of the desert dishes and back in the salads,
sandwiches and sushi. I would make this again for friends to experience
but it is not my cup of tea.</span><br />

After buying some fresh herbs for a recipe a couple of weeks ago I
figured I could try and grow my own. I been interested in plants lately
and it sounded like a fun challenge. If you know me I do not have a
green thumb at all, I am more like the reaper of the plant world. I
don’t have much room where I live to have a garden or even a yard that I
can plant in, so everything is being done in little pots in our front
room. I have planted Thyme, Dill, Rosemary, Spinach, Chilies, Oregano,
cilantro, sage, basil, and a few sunflowers. Again do to the fact I
have no room I planted all the seeds of each plant together in there own
little pots. This may turn into a problem down the road I don’t know if
it will stop there growth or they will kill each other tell I have only
one champion. Either way I will keep posting the progress as I go. </span><br />

with the herbs in the soil I am going to try and get a avocado tree to
start. I have read about all the people that have been successfully so
why not. I started with buying 3 Avocados cut away the flesh and skin to
eat and removed the seed. I then took three toothpicks, stuck them into
three sides of the seed. Filled a glass full of water and placed the
seed in, the tooth picks only let it sit about ½ way in the water with
the large end down. I am thinking that in about a week they will start
to have roots. I will do a follow up post with the progress.</span></div>

out the new month I am motivated to get my diet back on track and top
it off with some exercise. I finished my job for the day and swung by
the house to pick up my roommate. After 5 min of pounding on his door
trying to wake him from whatever crazy sleep he was in, then followed by
another 10 min of motivational speeches he finally got out of bed. Then
the adventure started. I don’t really know what to do at the gym I am
new to the whole healthy thing. Only time I been to the gym before was
to go swimming with friends. I figured I would start with some cardio, I
went with a bike on hill mode for 25 min I want to work up to 45 min
down the road. I messed around with some of the weight machines but
don’t have any clue on how I should get started I am going to read up on
it. When I got home I decided to make a salad since I am in a healthy
mood right now I created a Italian salad based on one that I seen in a
package once at the grocery store.</span></div>

have a meatloaf throwdown coming up on march 6th and was going to try
for a Hawaiian twist, naturally I have a fresh pineapple ready for the
test progress. I figured I would make good of the scraps I remember
reading a cookbook and seeing you can use the left over pineapple to
make vinegar, I then quickly took a small nap and when I woke up I
quickly got on the computer and researched what it takes to make
pineapple vinegar from scratch. The process I had remembered was a open
air fermentation that allows natural yeast and bacterias that are in
the air to get into the mix and start the fermentation progress that
will soon turn to alcohol then to vinegar. The whole thing is amazingly
easy and can be done almost in thin air, yet that is what I am expecting

by washing out glass jar, you can sterilize it with boiling water if
you like, my understanding is you don’t need to do this process like
with canning. Slice up a pineapple and use it as you would like, keeping
the scraps that you normally toss into garbage without thinking. Cut
the pineapple rind into small pieces they don’t have to be tiny, add
them to a jar with water and ¼ cup sugar and give it a good stir tell
sugar is dissolved. Place cloth over top of jar and secure it with a
rubber band or string place in a dark place. I placed mine in a hallway
closet so I am not thinking about it and have the need to mess with it. I
will check it in a week and write a follow up on the process.</span><br />
